pumpkin olive oil recipe
Ingredients:
90g pumpkin
30g red onion
1 clove of garlic
1 red hot pepper
1 bell pepper
30g tahini (crushed sesame seeds)
Walnuts
1/2 lemon
1/2 orange
Hiç Extra Virgin Olive Oil

Chop the pumpkin vichy style. Cut the red onion into segments. Cut the garlic into two halves. Put all the chopped ingredients into a baking tray. Add olive oil, salt, red hot pepper, the juice of half a lemon and the juice of half an orange. Stir gently. Cook for 8 minutes at 200C. Transfer the vegetables into a serving dish. Add tahini to remaining liquid in the tray and stir. Serve with sauteed bell pepper slices and roasted walnuts.
